This cheese, of cow or goat milk, is of cultural significance in Georgia’s Samtskhe-Javakheti and Kvemo Kartli regions. It can be found inside of puff pastry which is sold on the open market. This cheese is mixed with a variety of coarsely grated cheeses in the region, much like Emmental cheese, feta, and low-moisture mozzarella. The puff pastry is coated with egg yolk before achieving a golden brown color after 30 minutes of baking.
